Sodium propionate is a common food additive that is industrially manufactured but also occurs in nature. Since it is toxic to mold and some species of bacteria, it is an especially effective additive in baked goods or other products that are susceptible to spoilage. Sodium propionate is an effective inhibitor of the growth of certain molds and some bacteria in bakery goods. It is usually preferred in non-yeast leavened bakery products because the calcium ions’ of calcium propionate interfere with the chemical leavening agents. In those bakery products, such as cakes, tortillas, pie fillings etc., chemically leaved agents are used (e.g.baking powder). sodium propionate is easy to handle and easy to incorporate into flour. It is a safe compound when encountered at the low levels found in food.

The compound works primarily as an inhibitor. In simple terms, this means that it works within a substance to stop the energy source that any development of bacteria would depend upon. As a result, the propionic acid prevents even naturally occurring bacteria from feeding since it destroys or at least blocks the enzymes that provide essential fuel for bacterial growth.
Calcium propanoate is common in nature in settings where bacterial growth is likely, and it tends to be most prolific in moist, energy-rich environments. Raw milk generally contains trace amounts naturally. Researchers are also able to create it chemically, too, which tends to be a lot faster and less expensive than extracting it from pre-existing sources. The synthetic version is registered as "E number 282" on Table 3 in the Codex General Standard for Food Additives, a document written by the Food and Agriculture Organization of the United Nations and the World Health Organization. The "E" rating means that it is accepted by the European Union for the same applications and definitions.

3. Product Applications
Calcium propionate is used as a preservative in a wide variety of products, including but not limited to bread, other baked goods, processed meat, whey, and other dairy products. In agriculture, it is used, amongst other things; to prevent in cows and as a feed supplement, Propionates prevent microbes from producing the energy they need, like benzoates do. However, unlike benzoates,propionates do not require an acidic environment.
Calcium Propionate can inhibit growth of some individual molds and bacteria and is widely used in grain products such as bread to inhibit molds and prolong product shelf life. In addition, it is used to prevent other products from deterioration resulted from microorganisms. Compared with other bacteria killers, it is non-toxic and lowin cost, and thus is widely used in wines, cakes,fruit jam, bean products, chocolate, cheese and western style meal. It is never harmful to health and has a remarkable effect in anti-mold.
